Toasted Rice Powder gives an aromatic nutty flavor to larp recipes. It is the secret ingredient in giving larb its crunch and special nutty taste.

Growing up, I remember making ข้าวคั่ว Khao Koor with my mom in our backyard. My mom would toast the rice outside over the grill, and I would grind it with a mortar and pestle. While we made the Thai toasted rice rice powder, my mom would tell me bewitching stories of growing up in Laos and how she learned to cook. Large quantities of Khao Koor are made so it can be shared with aunts and uncles - cooking is always a family affair that is meant to be shared and enjoyed.

Today, my family uses a blender instead of a mortar and pestle to save time. There are villages in Laos and Thailand that still make it the traditional-style with a mortar and pestle. (Also known as Bot Thinh in Vietnamese)

Recipe Ingredients:

  • 1/4 cup uncooked Thai sticky rice (glutinous rice)

Recipe Steps:

  • In a hot pan or wok, toast the uncooked sticky rice over high heat. You will want to continuously shake and stir the pan until the rice turns a medium to dark golden brown color (about 8-10 minutes).
  • Remove from the heat and allow to cool.
  • Grind the rice into a fairly coarse powder in a spice mill, mortar and pestle or blender. Store the toasted rice powder in glass jars. It should keep for 3 months.
