Yachae Twigim (Deep Fried Vegetables)

  			Twigim (튀김) refers to batter-dipped and deep-fried items, including vegetables, shrimp and other things; yachae 야채 refers to vegetables. You can use any kinds of vegetables you want - try eggplant, zucchini or other things. This recipe uses sweet potatoes, carrots and onions.  		
  	  	Recipe Ingredients:
  	
  		  			- 1/2 large sweet potato, about 8 oz
 
  		  			- 1 small size carrot
 
  		  			- 1 small size onion
 
  		  			- 1 cup of flour
 
  		  			- 1 cup corn starch
 
  		  			- 1 cup cold/ice water
 
  		  			- 1 egg
 
  		  			- 2 tsp salt
 
  		  			- 1/2 tsp black pepper
 
  		  			- 2 cups of vegetable oil
 
  		  	
  	Recipe Steps:
  	
  		  			- Shred all the vegetables in match stick style or whatever shape you prefer. For matchstick style, cut in thin round pieces and cut length wise about l/8” wide.  Mix all the cut vegetables together, and dust lightly with the flour.
 
  		  			- Whip egg. Make frying batter, mixing flour, corn starch, whipped egg, cold water, salt and pepper.
 
  		  			- Heat vegetable oil in a pot until it’s very hot, then turn it to med heat.  Dip vegetables in the dough using a chop stick gathering approximately 1 tbsp.  Fry for about 2-3 min, and put it on a plate with a paper towel.
