Sesame Green Beans (Ingen no goma-miso ae)
Ingen no goma-miso ae
This washoku (traditional style) Japanese recipe is utterly simple -- fresh, still crisp beans mix with the earthy flavor of miso and sesame for a quick and excellent side dish.
Recipe Ingredients:
- large handful fresh green beans
- salt
- 1 tbsp miso paste
- 1 tbsp roasted sesame seeds and some for sprinkling as a garnish
- 1 tsp sugar, or more to taste
- splash of warm water or dashi, if you have it
Recipe Steps:
- Wash the green beans and trim the ends. Bring a pot of water (just enough to cover the beans) and add a little salt. Bring the water to a boil and toss the beans in for just a minute or so. Quickly remove and wash with cold water and let cool in a strainer.
- Meanwhile, roast the sesame seeds on a nonstick pan -- they're ready when they start popping. Grind to a rough paste using a mortar and pestle.
- Combine the sesame paste with the rest of the ingredients, taste and adjust.
- Chop beans in half or into 1-2" segments. Mix with the sauce paste thoroughly. Dole out into individual servings in small dishes and garnish with sesame seeds.
