Recipe Ingredients:

  • 6 cups cooked rice (the older the better)
  • 2 cups kimchi, cut into small pieces
  • ½ zucchini, diced
  • 3, 4 garlic cloves, minced
  • 2 green onions, finely diced
  • 4 eggs, sunny side up
  • 2 tbsp sesame oil
  • 2 tbsp soy sauce
  • 1 tsp sesame seeds
  • 1 tbsp sugar (if using older kimchi)
  • 2 tbsp olive or vegetable oil

Recipe Steps:

  • After washing the zucchini, cut into small cubes along with the kimchi.
  • Heat 2 tbsp. olive oil in a non-stick skillet over medium-high heat. Saute the diced zucchini, kimchi, and garlic for about 10 minutes.
  • Next, add leftover rice, sesame oil, and soy sauce to the kimchi. Mix well and stir fry for another 5 minutes. If needed, add some sugar to balance out ripened kimchi. Set aside on a serving platter or individual dish.
  • In the same non-stick frying pan, make 4 sunny side up eggs. Top on fried rice, garnish with sesame seeds, and enjoy!
