Chinese Sesame Noodles
In college, all my friends would order this dish from our local takeout place on campus. I thought I could improve the flavors and make it cheaper. Eventually, this recipe for Chinese Sesame Noodles became a frequently requested dish by my roommates and friends. What I love most about this dish is that you can add any vegetable or protein you want to the noodles and peanut dressing.
Recipe Ingredients:
- For peanut dressing
- 1 cup creamy peanut butter
- 1 cup hot water (not boiling)
- 1/3 cup lime juice
- 2 tablespoons soy sauce
- 3 tablespoons honey (you may need to add more)
- 1 tablespoons Asian sesame oil
- For noodles
- 3/4 lb dried spaghetti
- 1 red bell pepper, cut into 1/8-inch-thick strips
- 1/2 bunch of asparagus, blanched
- 1 cup shredded rotisserie chicken (leftovers work great)
- 1 1/2 tablespoons Asian sesame oil
- Crushed peanuts, for garnish
Recipe Steps:
- Whisk together the dressing ingredients in a medium bowl until smooth, about 2 minutes.
- Cook pasta in a large pot of boiling salted water until tender. Drain in a colander, then rinse well under cold water.
- Toss pasta, chicken, asparagus, bell peppers in dressing, until thoroughly combined. Drizzle sesame oil over the noodles. Garnish with crushed peanuts and serve immediately.
- If you want to add some spice to the dish, add one tablespoon of Sriracha hot sauce to the peanut dressing.
