If you don't have the side dishes on hand, it is a little bit more work, but not that hard. You can also use the opportunity to make a lot of side dishes -- some of which you use for bibimbap, the rest which you can save and eat with rice for other meals (as my recipe allows for below). My version is "deluxe" -- I use carrots, white radish, spinach, mushrooms, bean sprouts and fernbrake. You don't have to use all if you don't want to ... any 3-4 is fine. You can also use different vegetables like zucchini, oyster mushrooms, etc.
