Nam Sapparot (Fresh Pineapple Juice)

  			Fresh pineapple is optimal for the best flavor.  In a pinch, you can use frozen or canned pineapple.  You can  replace seltzer water for the last two cups of water for a fizzy drink.    		
  	  	Recipe Ingredients:
  	
  		  			- 2 cups of fresh pineapple chunks
 
  		  			- 2 cups of sugar
 
  		  			- 2 cups of water
 
  		  			- 1/4 cup of fresh lime juice (preferably kaffir limes)
 
  		  			- 2 cups of water
 
  		  	
  	Recipe Steps:
  	
  		  			- In a medium saucepan, bring 2 cups of sugar and 2 cups of water to a boil; simmer until the sugar is dissolved, 3 minutes; this will create a simple syrup.
 
  		  			- Add the fresh pineapple to the syrup and boil for 1 minute.
 
  		  			- Remove from the heat and let cool completely for 2 hours.
 
  		  			- In a blender or food processor, puree the pineapple and simple syrup mixture.  You can either puree it until completely smooth; or, you can keep the consistency chunky. Pour into a pitcher.
 
  		  			- Add lime juice and 2 cups of water to the pitcher.  Sweeten as needed with sugar.  If you prefer a more tart flavor, add more lime juice.
 
  		  			- Refrigerate and serve with ice.
