Ginger-Scallion Dipping Sauce

  			Ginger Scallion Dipping Sauce is typically found as a condiment at many Chinese restaurants. My Chinese best friend was kind enough to share her authentic recipe for Ginger Scallion Dipping Sauce.  It is a simple dipping sauce complementing a variety of food like chicken, noodles or seafood.     		
  	  	Recipe Ingredients:
  	
  		  			- 1 Shallot
 
  		  			- 2.5 inches of ginger (3 tablespoons of minced ginger)
 
  		  			- 3 scallions
 
  		  			- 1 cup of vegetable oil (canola or olive oil)
 
  		  			- 2-3 teaspoons of salt
 
  		  	
  	Recipe Steps:
  	
  		  			- Wash the scallions and let dry. Once the scallions are dry enough, finely slice them.
 
  		  			- Peel the ginger and then finely mince the ginger.
 
  		  			- Mix the ginger and scallion together in a small bowl.
 
  		  			- Add 2-3 teaspoons of salt into the ginger-scallion mixture.
 
  		  			- Use your hand to mash the scallion, ginger and salt together then set the mixture aside.
 
  		  			- Preparing the oil:
 
  		  			- Peel the shallot and then dice the shallot.
 
  		  			- In a pot, heat 1 cup of vegetable, canola or olive oil.
 
  		  			- Once the oil is hot, put in the dice shallots.
 
  		  			- When the shallots turn a golden brown, turn off the heat.
 
  		  			- Slowly scoop the oil onto the ginger-scallion mixture (omitting the cooked shallots) and mix it together with a spoon. Let it cool for 10 minutes before serving.
 
  		  			- Great seasoning for:
 
  		  			- Hainan Chicken (steamed or boiled chicken)
 
  		  			- Corn on the cob
 
  		  			- Hand drawn noodle dishes or Lo mein noodles
