Chadolbaegi gui (or chadolbaeki gui) is simply grilled beef brisket. Typically, when you eat Korean BBQ, you don't just eat it by itself, but with banchan (side dishes) and with maybe a jjigae (Korean stew) or so. Or you can eat it sangchu ssam style, where you wrap the meat in a piece of lettuce.

To grill this beef brisket, you need one of those compact tabletop grills that uses the propane or electricity – they are not very expensive (about $50-$70) and it’s very handy to have one. This is because chadolbaegi is pretty thin and cooks quickly, and you want to grill it as you eat it.

Recipe Ingredients:

  • 1 ½ lb beef brisket
  • 1 small pk white mushroom or choice of vegetables
  • For sauce
  • ½ tsp salt
  • 2 tsp sesame oil
  • dash black pepper
  • For salad
  • 1 head red or green leaf salad
  • 2 bunches of green onion
  • 3 tbsp soy sauce
  • 1 tbsp red pepper powder (optional)
  • 3 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tbsp water
  • 1 tsp chamkkae (roasted sesame powder)

Recipe Steps:

  • Buy a pack of ready sliced beef brisket at the Korean or Asian grocery store - it it’s a frozen one, then defrost inside the refrigerator.
  • For the accompanying salad, wash the mushrooms, green onion, and lettuce. Drain water from lettuce and cut into thin slices. Cut off most of the bottom part of the green onion, and cut the top portion into thin slices. Put it in a bucket of water and let it sit for 7-10 min to get the hot spicy taste out of the green onion. Wash the mushroom and cut into halves.
  • Make the sauce by mixing the sauce ingredients. You might want to make separate sauce dishes for each person to dip.
  • Make the sauce for the salad, mixing all the ingredients. Mix the lettuce and onion together - put it in a bowl.
  • When everybody is ready to eat, start grilling the meat – wipe the grill top with greased paper towel. Put the beef slices and the mushroom pieces on the grill. While the beef and mushroom are cooking, put salad sauce over the lettuce and green onion bowl. Mix it around lightly, and serve with the cooked beef slices -since the beef has been sliced very thin, it doesn’t take too long to cook. You should grill quickly and consume, otherwise the beef can get burnt and hard. You can eat the beef with lettuce salad alone, or use the salt dipping sauce as an additional seasoning.
