In Season: 5 Zesty Cucumber Recipes

This time of year cucumbers are practically taking over farmers' markets and extremely cheap at the supermarket. Most of the time, those pretty cool, green cukes (which are actually fruits!) get tossed into a boring a salad.  We rounded up some cucumber recipes, from simple dishes to ones that surprised us and challenged us to look at cucumbers in another way.

Cucumber Recipes to Try

Shrimp Cucumber Stir Fry.  An easy stir-fry pairing shrimp and refreshing cucumber featuring an oyster-flavored sauce.






Oi Naengguk (Cold Cucumber Soup). This cold cucumber soup is easy to make and great for summertime. It's prepared simply with fresh cucumbers and a soy sauce-based broth that is slightly sour and slightly sweet.
