In Season: 4 Green Cabbage Recipes

Light green and long-leafed Napa cabbage is the most common type of cabbage used in Asian cooking, particularly in Korean kimchi, a dish made by fermenting the cruciferous veggie. But Napa cabbage can be difficult to find in your typical U.S. supermarket, especially during cold weather months. Green or “western” cabbage, on the other hand, is more widely available and is in season during the fall and winter. Although not native to Asia, this cabbage variety, defined by its spherical shape, smooth leaves, and darkish green color, is used as an ingredient in many Asian-inspired appetizers.
