Lotus root is known to be very nutritious. It has a lot of iron, vitamin B12, and tannin, which is a very important substance for reducing inflammation. It can sooth your stomach ulcer and also can be effective for people with frequent nose bleeding. Here is one recipe that you can eat with this wonderful plant. This is a simple recipe for a lotus root pancake; it can be used as an appetizer or serve as side dish (banchan).

Recipe Ingredients:

  • 200 g, about ½ lb fresh lotus root
  • 4 tbsp chopped onion
  • 1 egg
  • ½ cup flour
  • ½ tsp salt
  • ½ tsp white pepper
  • 4 tbsp frozen green pea, thawed, (you can substitute other cooked beans or vegetables)
  • vegetable oil for frying

Recipe Steps:

  • Peel the lotus root and grate or grind with a mixer.
  • Add the chopped onion into the grated lotus root, crack in an egg, then add salt and pepper. Mix well and add the flour to make a smooth batter (you can adjust the flour if needed).
  • Bring a frying pan to medium heat and put enough vegetable oil to cover the surface. Form each pancake using about 1 tbsp full of mixture. Place on the pan and flatten a bit - add 3-4 thawed green peas, and fry until the bottom gets lightly brown, then turn it over. Fry additional 20-30 secs or until other sides bottom gets brown. Serve warm.
