My friends are always surprised at how quickly this recipe for Panang Meatballs comes together. I love having it with rice - it hits the spot. YUM.

Recipe Ingredients:

  • 1 pound ground beef
  • 3 cloves of garlic
  • 2 tablespoons soy sauce
  • 1/4 cup of cilantro
  • 1 tablespoon fish sauce
  • 1/4 teaspoon black pepper
  • 4 tablespoons panang curry paste
  • 1 1/2 cups coconut milk
  • 1 tablespoon fish sauce
  • 3 tablespoons brown sugar

Recipe Steps:

  • To make the meatballs, combine beef, garlic, cilantro root, fish sauce, black pepper, and soy sauce in a medium bowl. Thoroughly mix together the ingredients. Shape the beef mixture into 1-inch balls (makes about 10 meatballs).
  • In a medium sauce pan, fry up the curry paste for 2 minutes until fragrant.
  • Stir in the coconut milk, fish sauce and brown sugar.
  • Drop in the meatballs into the curry broth and bring to a boil. Boil the meatballs for 10 minutes and reduce to medium high heat. When the meatballs are on medium high heat, let the curry sauce reduce down for about another 5-8 minutes.
  • Serve.

so i made this to accompany the vinegar/sugar cabbage to cool off my tongue from the panang. (i've tried panang before can get spicy). Next time I'll eat with rice, i bet that's good. i thought the panang would overpower the meatball, but i could actually taste the cilantro/soy/fish sauce, etc. in the meatball. the key to this meatball might have been the cilantro...i'm not sure. i just know it was good & worth commenting on. i'm going to experiment with other types of meat...maybe chicken.
