Massaman curry paste is one of the most mild Thai curries that exist today. It highlights the influences of Islamic cooking.
Recipe Ingredients:
20 dried red chilies
1 tablespoon ground coriander seed
1 teaspoon ground cumin
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground star anise
1 teaspoon ground cardamom
1 teaspoon ground white pepper
4 tablespoons chopped shallots
1 tablespoons kaffir lime leaf, minced
1 tablespoons shrimp paste
4 to 6 tablespoon chopped garlic
2 teaspoons fish sauce
½ cube galangal root, chopped
2 2-inch pieces of lemon grass, sliced thinly
Recipe Steps:
Using a mortar and pestle, pound the ingredients until it forms into a smooth massaman curry paste. If you are using a food processor or blender, you may need to add 2 tablespoons of water.
