Gim gui is simply roasting and seasoning dried seaweed sheets with oil and salt. When you buy this gim, you need to make sure that it isn't the already roasted, seasoned and pre-cut kind -- you can usually tell by looking at the package (I included a photo of the ready-made kind so you can tell). Note that sometimes this ready-made kind will have MSG added since it enhances the flavor. Also, it is generally cheaper usually to make your own, especially if you want a lot.

Recipe Ingredients:

  • 1 pack of dried, unroasted/unseasoned dried laver (gim 김) -- approximately 10 pieces, or you can make as much as you want
  • salt
  • 5 tbsp of sesame oil
  • 1 tbsp of vegetable oil

Recipe Steps:

  • Mix sesame oil and vegetable oil.
  • Put laver on a cutting board and brush oil on one side, sprinkling a pinch of salt on the oiled side.
  • Put a skillet or a large flat griddle on the stovetop, heat it and roast gim - if the pan is hot, it should only take a few seconds per side (flip quickly so it doesn't burn through) -- when the gim changes from black to greenish, it's done roasting. Stack the roasted gim in a neat pile to the side.
  • Slice the gim in fours or sixes so they are like small cards. This is to make it easier to eat.
  • If you roast a lot of gim, you can store it (uncut) in a ziploc in the freezer for a couple of weeks. If you want to use it for next couple of days, store it in the refrigerator in a tightly sealed plastic container. It will get stale after that and won't taste crispy.
