The Pad Thai recipe calls for palm sugar. Can brown sugar be substituted for palm sugar?

What kind of brown sugar is closest to palm sugar? I have something called "brownulated" at home - but there's dark brown sugar, light brown sugar ...?

Yes there are different kinds of palm sugar. Thai palm sugar is more subtle with caramel notes. Indonesian palm sugar is more smokey. Malaysian palm sugar is more intense in flavor from the start. Hope this helps!

Yes, brown sugar can be substituted for palm sugar. Recipe purists believe that the taste of palm sugar resembles that of brown sugar, yet with more rounded caramel and butterscotch notes. When you are in a pinch, you can use brown sugar for palm sugar.

Let me know how the recipe for pad thai goes. Good luck!
