What can I use to substitute coconut milk in recipes???

coconut juice or water is a good substitute.  it provides the same flavor as coconut milk.

I've used a thicker cream like sour cream or yogurt, slightly sweetened, not add sweetness as to limit tartness.  Let me know if you try this...

you can use 2% milk.  i won't use skim milk because you still want some fat content to the recipe.  this works for me if I am making curry. this is a good tutorial on coconut milk and other forms of coconut liquids:  http://asiansupper.com/theslurp/what%E2%80%99s-difference-coconut-milk-vs-coconut-cream-vs-coconut-waterhope this helps!
